Baked Salmon with Parsnips & Sweet Potatoes

Cooking time: 40-45 mins
Ingredients:
Serves 4
- 4 x 120g salmon fillets
- 6 small sweet potatoes, peeled and thinly sliced
- 2 parsnips, peeled and thinly sliced
- 2 tbsp light olive oil
- 4 sprigs of fresh thyme
- 4 scallions, trimmed and washed
- salt & ground black pepper to taste
- lemon wedges for garnish
Directions:
Preheat the oven to 425 Fahrenheit.
Lightly grease a baking dish. Spread sweet potatoes and parsnips, and drizzle with 1 tbsp of olive oil. Bake for about 20 mins until vegetables begin to soften. Flip vegetables and continue to bake for an additional 10 mins.
Place salmon on top of vegetables with thyme sprigs and scallions. Season with salt and pepper. Drizzle a bit of olive oil and bake for a further 8-10 mins until salmon is cooked.
Serve with lemon wedges on the side.
