Arugula Mushroom Raisins Salad
. Arugula is a rich source of calcium and iron.
. The carrots are a good source of vitamin A and mushrooms provide plenty of selenium.
. This colorful salad looks like it comes right from a restaurant and is prepared in just 5 minutes!
Ingredients:
- 1 bunch Arugula
- 2 cups sliced button mushrooms
- 1 can drained garbanzo
- ¼ cup raisins
- 1 shredded carrot
- Soyonnaise
- Balsamic vinegar
- Canola oil
- Optional: sprouted grains (lentils, alfalfa, etc….)
Directions:
-1- Put the Arugula salad at the bottom of the salad bowl
-2- Add in the following order: mushrooms, garbanzo beans, shredded carrot, raisins and sprouted grains.
-3- Drizzle with vinaigrette made with Balsamic vinegar, oil and 1 Tbs of soyonnaise.
-4- Toss and enjoy!
