Beans - spicy

Ingredients:
2 teaspoons peanut oil or macadamia nut or canola oil
2 onions, diced finely
2 cloves garlic, crushed
2 teaspoons ginger, grated
1 tablespoon coriander, ground
2 teaspoons cumin, ground
1 teaspoon turmeric, ground
2 teaspoons garam masala
1/2 red capsicum, cut into strips
3 tomatoes, peeled and chopped
2 cups chickpeas (garbanzo beans), cooked
500 g green beans, trimmed
1 cup tomato juice
3 tablespoons coriander, chopped (optional)

Method:
1. Heat the oil in a frying pan or wok and stir-fry the onion, garlic and ginger over a medium heat for 2 minutes. 2. Add all the spices, capsicum and tomatoes and cook, stirring for 3 - 5 minutes 3. Add the chick peas and tomato juice and bring the mixture to the boil. Reduce heat and simmer for 10 minutes. 4. Add the green beans and simmer for a further 5-10 minutes. Stir in the chopped coriander.

Notes: Delicious as a side dish with fish or chicken or serve as is for a vegetarian meal.
