Thai Peanut Soup
Ingredients:
- 1 Cup broccoli, chopped
- 3/4 Cup Yellow Finn, Red or sweet potato, cubed
- 1 Cup cauliflower
- 1 Medium onion, chopped
- 2 Tsp fresh ginger, grated or 1 tsp dried ginger
- 3 Cloves garlic, chopped
- 3/4 Tsp salt
- 3/4 Tsp pepper
- 2 Tbsp Olive oil
- 1 Medium tomato, diced
- 1 Tbsp hot sauce (optional)
- 1 Cup jasmine rice
- 4 Cups vegetable stock
- 2 Cups water
- 2 Tbsp tamari or soy sauce
- 6 Tbsp creamy peanut butter
Directions:
-1- In a large pot, saute the broccoli, cauliflower, onion, ginger, garlic, salt and pepper in oil on medium heat, stirring often, untilvegetables are tender, about 6-8 minutes.
-2- Add tomato, hot sauce and rice, sitrring another 4 minutes or so, until rice is coated and tomato begins to break down.
-3- Stir in the stock, water, tamari and peanut butter.
-4- Reduce heat cover and simmer for 20-30 minutes, stirring occasionally.
Serving suggestions:
This is a full meal in itself which does not need any side dish. Enjoy!
