Quinoa Pilaf

Quinoa Pilaf

Ingredients:

- 3/4 cup quinoa
- 2 tsp olive oil
- 3 green onions, chopped
- 3 garlic cloves, minced
- 2.5 cups boiling water
- 3/4 tsp salt
- 1/4 tsp pepper
- 1/4 cup dried apricots, chopped
- 1/4 cup walnut pieces

Directions:

-1- Place quinoa in a colander and rinse well under cold running water. Set aside to drain.
-2- In large pan, over low heat, toast walnuts until golden brown, stirring occasionally and watching carefully not to burn.
-3- Set walnuts aside.
-4- Put oil in pan ove rmedium heat.
-5- Add onions and garlic and cook, stirring frequently, until onions are tender.
-6- Stir in quinoa and cook for 3 minutes or until lightly toasted.
-7- Add boiling water, salt and pepper.
-8- Reduce to simmer, cover and cook for 20-25 minutes or until quinoa is tender.
-9- Stir in apricots and walnuts and enjoy!

Serving suggestions:

Serve with grilled wild meat, sauteed veggies or grilled wild fish.
