Roast lemon Chicken
Requirements: you will need:
* 3 lemon (1 rolled with hand to soften, and pricked all over with a fork, 1 sliced and 1 juiced)
* 1 onion, cut into quarters,
* 1 bay leaf
* sprig of thyme
* 1 table spoon olive oil
* salt and freshly grounded pepper
* 1.8kg free-range chicken
* 2 table spoon caster sugar
* and a glass of white wine.
Step one:
Preheat the oven to 220 degrees C, 425 degrees F, Gas 7. Mix together the lemon juice, chopped garlic, herbs, onion, olive oil, salt and pepper in a large bowl. Take the chicken and season with salt and pepper.
Step two:
Remove the skin from the breast of the chicken stuff some of your mixture in step one under the skin. Then with the remaining mixture, stuff the chicken cavity as well as with the pricked lemon.
Step three:
On each of the chicken legs, make a slit down to the bone and then, with a cooking string, tie the chicken legs together and then place on a roasting tray. Now season the outside of the chicken very well and brush with oil.
Step four:
With the sliced lemon laid on top of the chicken, sprinkle all over with the caster sugar then roast the chicken in the oven for about 1 hr 40 mins or until the juice run clear then remove from the oven. Drain off any fat, leaving the juice in the pan and leave the meat to rest for a while. Place the roasting pan on heat, add wine, reduce, add a splash of water and reduce again.
Finally, untie the string and cut the chicken into parts. Drizzle some of the reduced juices over and serve with steamed green beans and onion mash.
