Crispy Sun Dried Tomato Crusted Chicken
Chicken is a great source of lean proteins and should be part of a healthy diet.
Proteins are indispensable to build strong muscles.
Ingredients:
- 1/2 cup sun dried tomatoes in oil, drained
- 2 cups cornflakes
- 1/4 cup flour
- 1/2 tsp dried rosemary
- 1/2 tsp salt
- 1/4 tsp black pepper
- 4 boneless, skinless chicken breast halves
- 1 egg, beaten
Directions:
-1- Whirl tomatoes in food processor until chopped.
-2- Add next five ingredients, whirl until cornflakes are fine crumbs.
-3- Pour mixture into a plastic bag (food grade)
-4- Flatten chicken with palm of hand to 3/4-inch thickness (you can also use a roller or ask your butcher)
-5- Dip both sides of chicken in egg and place in the plastic bag (one piece at a time).
-6- Shake bag until chicken is coated with crumbs.
-7- Once all chicken breast halves are coated, bake on a lightly greased baking sheet at 400 degrees for about 14 minutes or until chicken is no longer pink in center.
Serving suggestions:
Serves 4.
Can be served with whole grain rice, green beans or a green salad with micro-greens.
