Cream of Celery Lentil Soup
A warm recipe that will transport you to India right away!
Can be prepared in advance and frozen in individual portions.
Good source of fibers.
Ingredients:
- 1 cup coral lentils
- 3 cups thinly sliced celery stems
- 1 thinly sliced onion
- 3 Tbs canola oil
- Vegetable or chicken broth (tastes better)
- Cumin
- Ground cloves
- Ground nutmeg
- Ground ginger
- Ground cinnamon
Directions:
Saute onion in oil on medium heat for 5 minutes and add celery. Continue sauteeing for 10 more minutes (Total sauté time = 15 minutes).
Add coral lentils and 4 cups of broth. Bring to a boil and reduce to LOW heat.
Add a sprinkle of each of the spices.
Let simmer, covered for 1 hour and 20 minutes.
Turn off the heat and leave on the heat source for as long as you can (or forget it there!)
Serving suggestions:
Serve as is, or mix to make this dish more like a cream of celery/coral lentil soup.
Serves 4
