Brown Rice Salad with Salmon & Raisins

Here’s a very simple recipe; an easy-to-make, complete nutritious meal!

Brown rice is an outstanding grain for many reasons: Its shell contains vitamins and minerals! Eating brown rice will benefit your health in wondrous ways. I advise you to buy organic brown rice; it is pesticide-free which is even better for you! Compared to white rice, brown rice is very nutritious because of its bran; it won’t raise your glycemic index.

As for the salmon...it is a fatty fish but a very good source of fats (famous Omega-3’s) which are excellent for your attention and brain function, and supports tissues and skin health from premature aging. Salmon also reduces cardiovascular diseases, as it has very few saturated fats (bad fats), generally found in red meat! The message is clear: eating salmon is a great benefit to your health. No hesitation, then!

Ingredients:

Serves 4

- 1 cup cooked brown rice
- 1/3 cup raisins (mix different varieties)
- 2 slices smoked salmon (wild, preferably)
- 1/2 romaine heart, chopped thinly
- Ingredients for a classical balsamic vinaigrette

Directions:

In a large salad bowl, combine all the ingredients! Serve right away so that the lettuce does not wilt :o)
