Bob's Dutch Baby with Clementines

Clementine

* 2 1/2 ounces (5 tablespoons) butter
* 3/4 cup flour
* 3 large eggs
* 3/4 cup milk
* 1/2 teaspoon salt
* 8 Clementines from Spain
* 2/3 cup fresh or frozen berries
* A little powdered sugar
* Any flavored syrup or honey

Make this preparations first!

OVEN: Adjust rack to upper third of oven. Turn on to 450° F.

FRUIT: Peel and segment Clementines. (You will have about 3 cups.) Slightly thaw berries, if frozen.

SYRUP or HONEY: Warm syrup or honey over low heat or in a microwave at 50% power for 1 minute just before serving.

1. Melt butter. Put butter in very large (12-inch) skillet with oven-proof handle. Set in oven for 5 minutes to melt butter completely—okay if it begins to brown.

2. Make batter. While butter melts, measure flour into large bowl. Add eggs, milk and salt. Beat until smooth, using a whisk, large spoon or hand-held electric mixer.

3. Bake and serve. Pour batter into hot pan. Return to oven and bake for 15 to 20 minutes, until sides are puffed up and dark golden brown. Remove from oven. Loosen from sides and bottom of skillet, then slide onto serving plate. Top with Clementine segments and berries. Sprinkle with powdered sugar. Cut into wedges. Pass warm syrup or honey to pour on top.

Serves 4 or 5.
